Adam Kaplan
Born and raised in the Philadelphia area, Adam grew up in a household that loved food. With Jewish parents and large extended family there was always a feast going on or in the works.
Adam always had an appreciation for food, spending lots of time in the kitchen helping his mother cook. But at the age of 16, persistence and will landed him his first notable kitchen job at a fine dining establishment in Lambertville, NJ. From there Adam went on to go to Culinary School at The Pennsylvania Culinary Institute, where he graduated in 2001. After moving back to Philadelphia to work at several noteworthy restaurants, Adam spent time in working New York City as well as taking on his first head chef role, running the kitchen at a very successful Gastro Pub in the Queen’s Village Neighborhood of Philadelphia.
After leaving Philadelphia, Adam moved to Portland and found a job as the Chef of the Uptown Billiards Club. After the owner of Genoa had been in to eat several times at the Uptown Billiards club and was very impressed with the food, he offered Adam the Executive Chef Job at Genoa.
Adam was the last chef at Genoa before it closed due to the economic downturn in the winter of 2008.
Shortly after Genoa closed Adam moved to Pittsburgh where he ran the kitchen of a local Cantina and taught classes at CRATE cooking school. In December of 2010 Adam moved back to Portland. He lives with his fiancée and two dogs in SE Portland.
Adam says: “I love to eat! As a Chef, I strive to create unforgettable meals for my patrons and I love creating one-of-a-kind dining experiences. I have a true passion for food and service. I look forward to sharing my knowledge and my love of all cuisines with those in my classes.”
